- In a bowl, mix the warm water, yeast, and sugar.
- Add the flour and salt, then mix and fold until a dough forms. Cover and let rest for 1 1/2 hours.
- Lightly flour your work surface and divide the dough into 3 equal pieces. Shape into balls, cover, and let rest for 10 minutes.
- Flatten each ball, fold and seal with your fingers. Place on an oven rack or tray, cover, and let rest for 15 minutes.
- Bake at 490°F (255°C) for 5 minutes with steam.
- Reduce the oven temperature to 380°F (195°C) and bake for 15 more minutes.
