These easy Steak Fajitas are made with juicy marinated flank steak, sautéed peppers and onions, and served on warm tortillas for a quick and flavorful Mexican-inspired dinner that's perfect for busy weeknights.

Ingredients
  

  • 2 lbs flank steak
  • 2 bell peppers sliced
  • 1 white onion sliced
  • Juice of 2 limes
  • ¼ cup olive oil
  • 1 tbsp minced garlic
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp chili powder
  • ½ tsp cumin
  • Freshly cracked black pepper to taste
  • 2 tbsp olive oil divided
  • Flour tortillas for serving
  • Sour cream optional
  • Guacamole optional
  • Pico de gallo optional
  • Fresh cilantro optional
  • Shredded cheese optional
  • Lime wedges

Method
 

  1. In a large bowl, whisk together the lime juice, ¼ cup olive oil, minced garlic, salt, paprika, chili powder, cumin, and black pepper.
  2. Add the flank steak to the marinade and toss until fully coated. Cover and refrigerate for 30 minutes to 1 hour.
  3. Heat a large cast iron skillet over medium-high heat and add 1 tablespoon of olive oil.
  4. Once the skillet is hot, add the steak and sear for 4–6 minutes per side, depending on thickness and your preferred doneness. For medium-rare, remove the steak when it reaches an internal temperature of 130–135°F.
  5. Transfer the steak to a cutting board and let it rest for 10 minutes.
  6. In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil.
  7. Add the sliced bell peppers and onion. Season lightly with salt and pepper and cook for 3–5 minutes, or longer if you prefer softer vegetables.
  8. Slice the rested steak into thin strips against the grain at a slight angle.
  9. Serve the steak and vegetables in warm flour tortillas with your favorite toppings such as sour cream, guacamole, pico de gallo, shredded cheese, fresh cilantro, and lime wedges.

Notes

  • Marinating longer (up to 4 hours) adds even more flavor.
  • Slice the steak against the grain to keep it tender.
  • A cast iron skillet gives the best sear and authentic fajita flavor.
  • Warm tortillas before serving for the best texture.
