Method
- Preheat the oven to 175°C / 350°F.
- Place the cherry tomatoes in a baking dish and drizzle with olive oil.
- Add the garlic, parsley, chili flakes, salt, and black pepper. Mix lightly.
- Roast in the oven for 20 minutes, until the tomatoes soften and begin to burst.
- Remove from the oven and lightly mash the tomatoes with a fork.
- Stir in the Parmesan cheese and chopped basil.
- Top with the stracciatella so it melts into the warm tomatoes.

• Serve immediately while warm for the best texture.
• Burrata filling melts best when added right after the tomatoes come out of the oven.
• Adjust chili flakes to your preferred spice level.
