Ingredients
  

  • 300 g cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley finely chopped
  • 4 garlic cloves pressed or minced
  • 1 teaspoon chili flakes
  • Salt and black pepper to taste
  • 40 g grated Parmesan cheese
  • 25 fresh basil leaves roughly chopped
  • 150 g stracciatella burrata filling

Method
 

  1. Preheat the oven to 175°C / 350°F.
  2. Place the cherry tomatoes in a baking dish and drizzle with olive oil.
  3. Add the garlic, parsley, chili flakes, salt, and black pepper. Mix lightly.
  4. Roast in the oven for 20 minutes, until the tomatoes soften and begin to burst.
  5. Remove from the oven and lightly mash the tomatoes with a fork.
  6. Stir in the Parmesan cheese and chopped basil.
  7. Top with the stracciatella so it melts into the warm tomatoes.

Notes

• Serve immediately while warm for the best texture.
• Burrata filling melts best when added right after the tomatoes come out of the oven.
• Adjust chili flakes to your preferred spice level.
