Lasagna Soup

This lasagna soup has all the classic flavors of traditional lasagna in an easy, comforting soup form. Made with ground beef, hearty pasta, rich tomato sauce, and a creamy, cheesy finish, it’s a perfect cozy dinner for busy nights.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • optional: add 1 pound Italian sausage
  • 1 medium onion diced
  • 2 teaspoons minced garlic
  • 1 tablespoon tomato paste
  • 1 24 oz jar spaghetti sauce
  • 5 cups chicken broth
  • 1 standard 32-oz carton + 1 cup
  • 1 12 oz package lasagna noodles, broken into pieces
  • Splash of heavy cream about ¼ cup
  • ½ cup grated Parmesan cheese
  • 5 tablespoons ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Garlic powder to taste
  • Onion powder to taste
  • Cajun seasoning to taste
  • Italian seasoning to taste
  • Salt to taste

Method
 

  1. In a large pot over medium-high heat, heat the olive oil. Add the diced onion and sauté until softened.
  2. Add the minced garlic and cook for an additional 1 minute, stirring frequently.
  3. Add the ground beef (and sausage if using) to the pot and break it into small pieces. Season with garlic powder, onion powder, Cajun seasoning, and Italian seasoning. Cook until the meat is browned.
  4. Stir in the tomato paste and cook for 1–2 minutes.
  5. Add the spaghetti sauce and chicken broth. Bring the mixture to a boil.
  6. Once boiling, add the broken lasagna noodles and a splash of heavy cream. Reduce heat slightly and simmer until the pasta is tender.
  7. Stir in the Parmesan cheese, ricotta cheese, and mozzarella cheese until melted and well combined.
  8. Season with salt to taste and serve warm.

Notes

  • This soup thickens as it sits — add extra broth when reheating if needed.
  • Italian sausage adds extra flavor, but ground beef alone works great.
  • Serve with garlic bread or a simple salad.
