Ingredients

  • 1 tbsp butter
  • 1 onion diced
  • 1 package kielbasa sliced
  • Minced garlic to taste
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1/2 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • Pasta of choice
  • Shredded cheddar cheese to taste

Method

  1. Add the butter to a large pot over medium heat. Add the sliced kielbasa and diced onion and cook until the kielbasa begins to brown and the onion has softened.
  2. Add the minced garlic and cook briefly until fragrant.
  3. Add the chicken broth, diced tomatoes, heavy cream, salt, black pepper, and pasta to the pot. Stir everything together, making sure the pasta is submerged in the liquid.
  4. Cover the pot with a lid and bring to a gentle simmer. Cook for about 15 minutes, or until the pasta is cooked through, stirring occasionally to prevent the pasta from sticking to the bottom.
  5. Once the pasta is tender, add the shredded cheddar cheese and stir until completely melted and the sauce is creamy. Serve warm.

Notes

Cooking time may vary depending on the type and shape of pasta used. Make sure the pasta is submerged in the liquid before covering the pot.
If the liquid is absorbed before the pasta is completely cooked, add a small splash of chicken broth and continue simmering until tender.
For an extra creamy pasta, add additional heavy cream or shredded cheddar cheese at the end.
