Preheat oven to 400°F.
Peel and thinly slice the potatoes. Set aside.
In a saucepan over medium heat, add the heavy cream and minced garlic. Cook until fragrant, about 1–2 minutes.
Add the chicken bouillon, pepper, thyme, and parsley. Stir well and allow the mixture to simmer until it thickens slightly.
Arrange half of the sliced potatoes in an even layer in a greased baking dish.
Pour half of the cream sauce evenly over the potatoes.
Sprinkle half of the shredded cheese over the sauce.
Add the remaining sliced potatoes in an even layer.
Pour the remaining cream sauce over the potatoes and top with the remaining cheese.
Cover tightly with foil and bake for 25 minutes.
Remove the foil and continue baking for 30–40 minutes, or until the potatoes are fork tender and the top is golden brown.
Allow to rest for 10 minutes before serving.
