These soft and chewy Cowboy Cookies are loaded with oats, toasted coconut, warm cinnamon, and chocolate chips. With crispy edges and soft centers, they’re the perfect homemade cookie for holidays, gatherings, or anytime baking.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 2 cups old-fashioned oats
  • 1 cup toasted shredded coconut
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F.
  2. Cream butter and sugars. Add eggs and vanilla.
  3. Whisk dry ingredients separately, then combine with the wet ingredients.
  4. Stir in oats, toasted coconut, and chocolate chips.
  5. Scoop dough onto a baking sheet.
  6. Bake at 350°F for 11–13 minutes until edges are golden.
  7. Sprinkle a little coarse/flaky salt at the end.
  8. Cool before serving.

Notes

• For extra texture, toast the coconut before mixing in.
• Do not overbake — the centers will continue setting as they cool.
• Sprinkle flaky salt while cookies are still warm for best adhesion.
