Method
- Preheat oven to 350°F.
- Cream butter and sugars. Add eggs and vanilla.
- Whisk dry ingredients separately, then combine with the wet ingredients.
- Stir in oats, toasted coconut, and chocolate chips.
- Scoop dough onto a baking sheet.
- Bake at 350°F for 11–13 minutes until edges are golden.
- Sprinkle a little coarse/flaky salt at the end.
- Cool before serving.

• For extra texture, toast the coconut before mixing in.
• Do not overbake — the centers will continue setting as they cool.
